Nine classes in 2019
Guardian Brewing Company is offering nine Beer School classes, open to the public (21+ only), in 2019. For more information, please read the details below each class or check out our Facebook event page.

Your instructor will be Kim Collins, a Certified Cicerone and the owner and Head Brewer of Guardian Brewing Company. Kim has been brewing professionally for seven years at six breweries. She is passionate about recipe research, the art of barrel aging, kettle sours, and session beers. Before and after Kim became a brewer, she taught a variety of university-level courses for 12 years at Indiana University, Metropolitan State University of Denver, and most recently Kalamazoo Valley Community College’s Sustainable Brewing Program. No matter how much Kim professes her love for craft beer, teaching is her life’s true passion.
PORTERS AND STOUTS – MAY 1
During this hour-long class, we will explore the history behind the two beer styles of Porter and Stout. Where did the styles begin? Where have American beer-makers taken the styles? This course includes 6 tasters of different beer styles we discuss in class. Come try a style you haven’t had before and learn about why it’s important to the world of craft beer.
AMERICAN IPAs – MAY 29 – SOLD OUT!
Do you like IPAs? (What does IPA stand for anyway?!) Want to know more about them? During this hour-long class, we will explore the history and nuances behind American IPAs. Where did the style begin and how did it morph into a beer style found in homes all over America? What flavors and aromas make American IPA special and coveted worldwide? This course includes 6 tasters of different IPAs discussed in class. Come in and learn more about your favorite beer style or try an IPA for the first time and see what all the hype is about!
HOW TO PAIR BEER WITH FOOD – JUNE 26
The art of pairing beer with food starts with understanding a few basic flavor combinations. Our goal for this class is for all participants to be able to successfully understand pairing elements well enough to successfully pair food and beer at home or order the beer that will compliment your entree best at restaurants.
During this course we will explore five well-known and easy to find beer styles as flavors, then connect them to five foods they pair well with.
SOUR, WILD, AND FUNK BEER – JULY 31
Calling all that are sour-curious and those that are seasoned sour beer lovers. Want to learn more about the world of sours, wild beers, and funky beers? What do each of those terms mean and how are these incredible beers made? Dive into the world of “sours.” Join us to discuss the history of the styles around the world, modern takes on sours, and why they are important to modern beer drinkers. This course includes 6 tastes of different styles discussed in class.
FIRKIN CLASS (MAKING REAL ALE) – AUGUST 28
Join us to learn more about the world of cask ale. Also called “Real Ale,” this beer serving style has been served in barrels of various sizes and materials over time. Our class will have a quick history and fermentation lesson before putting our skills to use! The class will break into 3-4 teams and make their own recipes in a firkin (metal barrel that has naturally carbonated beer aged in it).
The firkins will be served at our pub a month later and the cost of the class includes a pour of each firkin recipe. Grab your friends and family and come in to make something unique, never served before at Guardian!
GERMAN BEER STYLES – SEPTEMBER 11
Learn about German beers styles just in time for Oktoberfest! (What is Oktoberfest?!) During this hour-long class, we will explore the history behind different, classic, German beer styles. How did the styles begin and how are they made today? This course includes 6 tasters of different styles we discuss in class. Come try a style you haven’t had before and learn about why German beer is important to the world of craft beer.
OFF-FLAVOR TRAINING – OCTOBER 2
Join us for a formal “off-flavor” beer training and improve the way you drink beer! Gain sensory knowledge and experience defining common off-flavors and what causes them. (Off flavors to be discussed are: Acetaldehyde, Bitter, Contamination, DMS, Diacetly, Ethyl hexanoate, Isoamyl acetate, Isovoleric acid, Light Struck, Metallic, Papery, and Spicy.
This course is good for craft beer geeks looking to improve their drinking experience, home brewers, pro brewers, restaurant and bar employees looking to improve their beer service, and especially anyone taking the Cicerone Level 1-4 Exams.
BELGIAN AND FRENCH STYLES – NOVEMBER 20
Like Brettanomyces? Know my friend Ester? (What am I talking about anyway?) Kim and Kate traveled to Belgium in 2017 before opening Guardian and want to share some of the awesome beer styles and history we discovered while traveling. We will also discover what’s going on beer-wise in historical and modern-day France. (I’ll give you a hint… it’s funky.)
During this hour-long class, we will explore the history behind the beer styles made primarily in France and Belgium. Where did the styles begin? Where have American beer-makers taken the styles? This course includes 6 tasters of different styles we discuss in class. Come try a style you haven’t had before and learn about why it’s important to the world of craft beer.
EXPLORATORY STYLES (WEIRD BEER!) – DECEMBER 18
Do you like weird beer? What constitutes weird/uncommonly flavored beers and who is making them well? During this hour-long class, we will explore the history and nuances behind Experimental Beer Styles. Where did they begin and how did it morph into a ton of beer styles found all over the world? What flavors are especially weird and totally delicious?
This course will wrap up our 2019 class schedule and includes 6 tasters of different styles discussed in class. Come in and learn more about weird beer and why it’s important to the future of craft beer.
